Do you have deep nested directories (do you have many sub-directories)? Is it enough to keep track of new files by timer? E.g. each minute. Or you need a solution that will be close to "real-time”? Just worked with FFMPEG for a project converting png files to video and adding the audio they went with. Will be hard but I can do it within a few days. Output will be a bash script that autodetects mp4 files and outputs the resulting mp3 files into a flat directory.
