Set Windows Server 2016 User credentials

I have hired a Dedicated Server with Windows Server 2016. I access it through Remote Desktop. I am the Administrator and I have to register an employee to work in the same desk as me (we will both access via Remote Desktop since we are in different places), so I would like to give him access but obviously not Administrator privileges , so I would like to find a way to create a user that could access the desktop that I have on the remote server and at the same time I could simultaneously monitor what it does. Likewise, and for security, I would like to limit the privileges that my employee has on that server, such as not being able to get the information from the server or access the secondary hard disk.
