Hi, I don't know anything about visual merchandising, to be honest. Just an idea that if your fair organizer provides a large touch screen display for your booth (a digital signage) then I think that would be a nice addition to your front store to stop any nearby visitors. Provided that a simple webpage (HTML, javascript, CSS) is allowed to be setup there inside screen machine / computer / pc, I might be able to help with webpage design and code. I think I had one similar project before, not for displaying jewellries items but to display today's weather. It had dark theme and was placed outdoor...
