Convert Incoming Emails to New Outgoing Emails

I need a to have incoming email message data automatically placed into a new email from a new email address to be automatically sent out to multiple recipients (3).
So, when data comes in, I need part of it taken and place into a new email that's sent out to multiple people. I don't know how to accomplish this, which is why I need you. I have cPanel hosting, email is hosted at Rackspace (mx is forwarded to them), and I have a Mailchimp, or however you think this can be accomplished.
Example incoming email:
