Oscommerce - streamline checkout process for seminar classes

My customer teaches continuing education seminars that allow electricians to keep current with the MN Electrical Code.
We've been using Oscommerce for the last 20 years to allow his customers to enroll in these seminars. Last year we updated to v2.3.4.1and did a complete re-install with the necessary mods.
I need help to streamline the checkout process to make it very simple for his customers. Some elements in the checkout process need to be removed like quantity, since each registration has the specific individual's info.
I know the Oscommerce checkout process for this site could be very much improved with a person with the proper skills. I want to work with someone who can help us out and enable the end users (with limited computer experience) to register for their classes and check out with a minimum of hassle and confusion.
