Zapier Webhook Catch JSON Assistance

I am working on an enhancement of a form to my ticketing system. The form sends the JSON data to Zapier as a Webhook Catch request. In Zapier I need to have the data extracted as individual fields. The data captured by Zapier is attached.
Within Zapier I need the extracted fields/data to be usable to pass to other actions. The fields I am looking for are:
User's Full Name - Damian Stalls
User's Title - vCIO
User's E-Mail Address - DamianS@[login to view URL]
etc...
I do not think this is something Zapier can natively do. I think we have to use Zapier scripting to parse this data, but I am not sure.
