I have re-skinned several iOS apps before. See "Singapore Memory Game" in my portfolio - the original game had nothing to do with Singapore! :-) Ads should be no problem either. You're planning to create an account with Admob or something? Would need to specify your account ID so that the ads earnings go to you (or we could setup the account for you too, and pass you the username/password later).
