Create Complex/Robust Release Plan Excel File

I have a release plan with tasks in a spreadsheet, and have the Projects, which all have different dates for those Tasks, currently, the dates are only relevant to task, with end date, but it's not covering all the Projects. It needs to be rearranged or perhaps create a dropdown list that allows one to pick the Project and the dates change accordingly.
