Research and Data Entry - Detailed listing of 30 fruit trees

My client requires a spreadsheet with detailed information on 30 fruit trees. Of the 30 trees there is a total of 70 varieties (example; Plum is one of the 30 trees, and there are 3 varieties of plum the data is to be collected for Santa Rosa, Japanese Donsworth and Narrabeen). This project is primarily targeting a freelancer with underpinning gardening and/or agricultural knowledge. I have some required data fields for each variety, such as Short Description, Long Description, Latin Name, harvest time, yield per year, market price per kg, use in food, use in drinks, use in alcoholic drinks, use in medicine, cultural significance. Details should be specific to the region of NSW South Coast (Nearest major town is Ulladulla - Call the region 'Shoalhaven Coast' if used in a description.). So Australian dollars, metric measurements, and harvest/climate specific to the region. I am looking for the winning freelancer to advise me on some other useful fields for end users, such as nutritional information (see link [login to view URL] ) - Maybe you have other ideas of data fields. The data will be targeted at end users picking fruits and walking the grounds of a fruit orchard, some trees will not be in fruit at the time the user is exploring and reading the information, so descriptions should help the user visualize the fruit. Historical and cultural significance for example might fit into long description so no unique column required for them. I don't necessarily need a full reference document, but if you pull a stack of data from a source like my usda link above, please make a note of the source, although it doesn't have to be a link for each item. I would prefer a little further research than just pulling the data off wikipedia, in particular where appropriate having the information specific to the variety of the tree. Obviously there will be many duplicates, as the 5 varieties of Olives might have the same use in food and drinks etc, but the descriptions might have slight variations. When bidding, I always like to see milestones, so a suggestion would be a minor payment for a sample of one item (even better include the sample in your bid description), this way I can provide some feedback before the rest of the research and data collection begins.
