Electric heater is practice but need a more time to reach high temperature but it easy to control if you want to keep the heat at any point. Gas burner is rapid heat source but a bit difficult to set the fix temperature. So mix of then is smart choice to get a fast increasing high temperature and then keep it. I have experience at many design not just a design base from a shape but also about the material that use in the product plan. But still I need more information about your detail expectation just like who will use?, what will bake?, where it will use? , optional dimension you want and what material you want.
